Salmon with Herbs de Provence

This salmon recipe is very easy and delicious! As long as you have lemon, olive oil, and pepper in your kitchen, you can swap out ingredients without buying special infused olive oil. This recipe has lots of flavor and seasonings - maybe go light on the spices until you determine your preferred taste.

Ingredients

1 - 2 pounds of salmon (skin off or on)

1-2 TBSP Herbs de Provence

Lemon infused olive oil (can be substituted for plain olive oil and lemon juice, separately)

1 Tsp Pepper (or lemon pepper if you have some in your cupboard)

  1. Preheat your oven to 450 degrees.

  2. Coat a 9 X12 baking pan with plain or lemon-infused olive oil.

  3. Brush your salmon on both sides with the lemon olive oil. (Or brush with plain olive oil).

  4. Place the salmon in the pan - skin side down.

  5. Sprinkle with lemon juice if using plain olive oil (about 2 TBSP).

  6. Sprinkle the salmon with pepper or lemon pepper.

  7. Sprinkle generously with Herbs de Provence.

  8. Bake for 25-30 minutes until the salmon is flakey and light. Do not overbake.
